Previous Work
Oliver offers consultancy across production planning, compliance, and continuous improvement, with a strong focus on safety in distillery environments. His previous work includes full distillery builds, implementing BRC- & SALSA-aligned quality systems, reducing hazardous areas through site and process redesign, and developing new products across gin, vodka, brandy, beer, and non-alcoholic spirits. He holds qualifications in HACCP, food quality auditing, health and safety, project management and is insured to carry out DSEAR risk assessments.

Burnt Faith Brandy House
Set up of all equipment including installation of a refurbished 2500L Cognac still modified to operate using steam and a heat recovery system. Responsible for innovation, production, cellar managment, supply chain and operations at the UK's first brandy house.
Republic of Fremantle Distillery
Commissioning a new grape to glass distillery including installation of ancillary equipment with unique production processes and award-winning recipe development of brandy, vodka and gin.


Sipsmith Distillery
Installed the new gin distillery in 2014 and managed the subsequent expansion works to increase capacity to +2 million bottles in 2018 following aquisition by Beam Suntory. Led facilities management, production and research & development at one of the category’s most successful new brands.
Dorset Brewing Company
Managing brewing, packaging and logistics at a regional brewery producing 6000hl of beer per annum in small pack and cask for independent retail and nationals including M&B and Weatherspoons.
